Designed to
imitate incisor teeth shearing through a food specimen. The
set comprises upper and lower teeth which, during the test,
are brought together until they almost touch. The sample is
positioned on the lower tooth and the result is measured as
the peak force required to bite through the sample.

Applications
Typically used to test meat products, vegetables, fruit and
crispy or crunchy food products. Results correlate with
tenderness, toughness and firmness of the sample. |
